The following steps can be done by going to Design › Edit Theme › General › Header › Search in your eCom back office.

The search field, which is displayed in the main header and at the bottom of the screen on phones, has placeholder text that you can customize to provide a more appropriate prompt for your customers.

You can change this text using the field titled Search text in the location shown above.
